First Prize  Oatmeal Cookie Recipe 

 

Spicy Oatmeal Cookies

Cookie Bake Off Entry Number 1

 

1 package spice cake mix

4 eggs whites

1 cup quick oats (not old fashioned or instant)

1/2 cup oil

1/2 cup raisins

 

Preheat oven to 350. Grease cookie sheet or use parchment paper. Combine in large mixing bowl, cake mix, egg whites, oil and oats. Mix on low until blended. Stir in raisins. Drop by teaspoons on to prepared pan. Bake for 10 to 12 minutes until lightly brown. Cool. Frost with glaze if desired. 

 


Second Prize Cookie Recipe

 

Oatmeal Raisin  Cookies

2 1/2  cups AP Flour

2 eggs

2 tsp vanilla

1 cup margarine/butter

3/4 cup shortening

1 cup granulated sugar

1 tsp Baking Soda

3 1/2 cups oatmeal

1 tsp salt

1 tsp cinnamon

1 tbsp molasses

1 1/2 cups raisins

1 cup packed brown sugar

1 tsp nutmeg

 

 Cream butter & shortening with sugars. Add 1 egg at a time. Add salt, soda, vanilla, molasses, cinnamon & nutmeg. Mix until well blended. Scrape sides and bottom of bowl. Add flour, then oatmeal. Mix until combined. Add raisins and mix through. Bake at 350 for 12 - 14 minutes.

 


Third Prize Cookie Recipe

 

Oatmeal Butterscotch Cookies

3/4 cup margarine

1 1/4 cups Flour

2 eggs

1 tsp vanilla

3/4 cup packed brown sugar

1 tsp Baking Soda

3/4 cup  sugar

1/2 tsp cinnamon

3 cups rolled oats

10 ounce package of butterscotch chips 

 

Heat oven to 375.

Mix  sugars & margarine until blended. Add eggs & vanilla to sugar mixture. Stir in flour, baking soda, cinnamon.   Stir in oats and butterscotch chips.  Drop by #16 scoop  on  ungreased sheet. Bake 20 minutes or until golden brown. Cool slightly and remove from sheet. Cool completely. Makes 15 cookies.

 

* you can use #32 scoop, bake about 15 minutes and makes about 3 dozen cookies.
